I don’t know how accurate the announcement was, but it brought sheer joy to the oldest who tripped over his backpack to hug the youngest who was simply trying to watch some cartoons.
You would think they didn’t enjoy school.
You would think they didn’t come home every other day to report on something they learned and how cool it was.
They do that too.
But, oh do these children love those lazy summer days. And, so do I.
But forgive me, I’m slightly off topic when there are these tasty blondies to discuss.
If my oldest were typing this he’d probably type something like: because my mom doesn’t have to run us around as much during the summer she’s got more time to make us these blondies.
Preheat the oven to 350 degrees. In a large mixing bowl, whisk together a 1/2 cup melted, unsalted butter with 1 cup packed brown sugar.
Add one egg and 1 tsp of vanilla extract to the batter and stir to combine.
Now, you’re ready to add 1 cup all-purpose flour, a 1/2 tsp baking powder, 1/8 tsp of baking soda and a pinch of salt. The batter will be a little stiff.
Finally, you’ll get to my favorite part of the recipe…adding 1/3 cup of mini peanut butter cups. Aren’t they cute?
Add the batter to a 8 x 8 pan that you’ve prepared with butter and flour. I took this final opportunity to press some additional mini peanut butter cups into the batter
And, to pop a few more into my mouth.
Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool. Cut into 9 squares.
Mini Peanut Butter Cup Blondies
1 cup of tightly brown sugar
1 egg, lightly beaten
1 teaspoon of vanilla
1/2 teaspoon baking powder
1/8 teaspoon of baking soda
Pinch of salt
1 cup of all-purpose flour
1/3 mini peanut butter cups (found at Trader Joes)
