It’s about getting dinner on the table quickly with not a lot of fuss or fanfare.
The recipes are simple and easy to follow. And, easily changed to suit you or your family’s tastes.

I’m not sure how your week is shaping up, buy mine seems like it’s going to be a bit of a whirlwind. The gusts of wind will be manageable, but there will be some busy days and evenings for sure.

Okay my friends, let’s get started.
First things first, set your oven temperature to 425 degrees. That was easy, wasn’t it?
Next, take out a small-mid sized mixing bowl and add three peeled, chopped apples. To the apples add 2 tbsp of pure maple syrup (please, no pancake syrup here…save that for Saturday morning).
To the same bowl, add two tbsp of whole grain mustard and one tbsp of cider vinegar.
Use a mixing spoon to combine the apples, maple syrup, whole grain mustard and cider vinegar. The whole thing should smell lovely at this point.
And by the way, if you have a kitchen assistant (for example, one of your children) stirring the apple-maple mixture would be a great way for them to help make tonight’s dinner.
Season everything with a little kosher salt and freshly ground black pepper. Roast in your pre-heated oven for 40 minutes, stirring twice.
The potatoes should be fork-tender.

Sweet Apple Sausage with Potatoes
1 1/2 lb apple sausage (I purchased mine at Whole Foods), cut into 1 1/2-2 inch pieces
3 firm apples (I used Gala), peeled and chopped
2 tbsp pure maple syrup
2 tbsp whole grain mustard
1 tbsp cider vinegar
1 lb small potatoes (small Yukon Gold or the Teeny Tiny Potatoes from Trader Joes), cut in half if needed and skin left on
Kosher salt and freshly ground black pepper
Flat leaf parsley, chopped (optional)
Preheat oven to 425 degrees.
Combine apples, maple syrup, mustard and cider vinegar in a bowl, stirring to combine.
Place apple mixture, apple sausage and potatoes onto a rimmed baking sheet and season with salt and black pepper.
Roast for 40 minutes, stirring twice during roasting time.
Serve with chopped parsley if desired.
