I’m so glad you stopped by today.
It dawned on me that I’ve been posting an awful lot of chicken recipes as part of my Mondays on Main St. series.
Apparently, we eat A LOT of chicken around these parts.
Because I’ve been on a poultry kick lately, I’m going to change things just a little for the next several posts in the series.
So you’ll see other recipes like those for soups and maybe even a favorite around here…breakfast for dinner.
This family will happily enjoy all manner of breakfast items when they show up for supper. Even some of the folks who’d eat pasta every. single. night. if I let them, love a good breakfast at supper time.

I try hard every night to make something a little different. To see exactly what will click with my littlest pasta eater. Some things work really well, like this citrus-honey marinade.
Other things fail miserably. Like meatloaf.

To get started, let’s prepare the marinade. Mix together the zest of 1 lime, 1/2 cup fresh lime juice, 1/4 cup of honey, 1/2 cup chopped fresh cilantro and 2 small jalapenos, seeded and minced.
Be sure to season the drumsticks (about 8-10) with kosher salt and freshly ground black pepper. Place them in a shallow dish and then add the marinade. Place the chicken into the refrigerator, covered and let marinate for at least 2 hours or up to overnight.
Preheat the oven to 425 degrees. Prepare a baking sheet by lightly spraying it with cooking oil. Alternatively, cover the baking sheet in heavy duty foil and then lightly spray with cooking oil. Place the drumsticks onto the baking sheet and discard the marinade. Bake for 35-40 minutes (turning once) or until chicken is cooked through and skin is golden.
You can garnish your platter with a little extra cilantro if desired. That pop of green sure looks pretty. And, if you’re looking for a simple side dish to accompany your dinner, take a look at this one. It would pair up well with these roasted drumsticks.

Honey Cilantro and Lime Chicken
Ingredients
zest from 1 lime
½ cup fresh lime juice (3-4 limes)
¼ cup honey
½ cup chopped fresh cilantro, plus additional leaves for garnishing your platter
2 small jalapeños, seeded and minced
kosher salt and freshly ground black pepper
8-10 chicken drumsticks
Method
Spray a baking sheet with cooking spray (or use heavy duty aluminum foil and then spray); set aside. In a shallow baking dish, combine lime zest, lime juice, honey, cilantro, and jalapeño;Add chicken and season well with salt and black pepper; cover with plastic wrap and marinate for 2 hours, up to overnight.
Heat oven to 425°F. Remove chicken from marinade and place on prepared baking sheet. Roast, turning once, until chicken is cooked through and skin is golden, 35 to 40 minutes. Transfer to a serving platter and garnish with additional fresh cilantro, if desired.
Serves: 4-5

Yes, they do sell the organic, Kosher chicken and I’ve used it many times. It’s quite good and worth the extra cost (though it’s not too much more than other packages). There was only a bit of heat and everyone ate it, which meant a peaceful dinner just talking about our day and what everyone did at school.
I’ll drink (a mimosa) to that! Cheers!

That’s funny (glad I’m not the only one)! Thank you…they were delicious and reminded me a little of summer with the bright citrus flavors. I really love marinades, since I can prep it the night before and then just roast or grill for dinner the next day. Makes things so easy at the end of a long day!
