Have I extolled the virtues yet to you my loyal (or new reader if you stumbled upon me) readers about chicken thighs? I won’t give you the full laundry list in this post, but suffice it to say they are inexpensive (versus the popular boneless, skinless chicken breast), full of flavor and you can prepare them a million different ways (just like the afore mentioned chicken breast).
Here’s another thing about this recipe that I love: you can easily substitute other flavor preserves, such as raspberry, and then grill the chicken thighs for a completely different flavor but still very simple. You’ll find most of the ingredients in your pantry and refrigerator and bonus: there are only 5 ingredients (not including salt and pepper). So easy!
Apricot-Glazed Chicken Thighs
Ingredients
3 tbsp apricot preserves
2 tbsp cider vinegar
2 tbsp extra-virgin olive oil
1-2 cloves garlic minced
5 boneless, skinless chicken thighs, trimmed of fat
Kosher salt and fresh ground black pepper, to taste
Method
Combine the preserves, vinegar, 1 tbsp oil and minced garlic using a whisk.
Pre-heat oven to 350 degrees. Season chicken thighs with salt and pepper. Heat remaining 1 tbsp olive oil in 12-inch (oven-proof) skillet over medium-high heat. When pan is hot add chicken thighs and brown about 3-4 minutes. Turn chicken and add apricot preserves mixture. Remove pan from heat. Bake in pre-heated oven until cooked through about 10 minutes.
Yield: 3-4 servings

Love this recipe idea! Funny, I just made chicken thighs this week wth an orange marmalade glaze, served over rice. The kids loved it (mom too) and it was an economical meal! I will surely grab a jar of Apricot Perserves next time I see it on sale! You are so right about how much flavor the thighs have (not to mention the price tag is nice too). Happy Cookin!

We tried this recipe two days ago. I was cooking with my daughter. She was reading off the ingredients. Needless to say I added both tbsp of olive oil to the apricot preserves mixture. I cooked everything according to the recipe. We had left overs so we decided to warm them up the next day for dinner again. OH MY the leftovers were so much better warmed up in a pan. The sauce was able to caramelize and thicken in the pan. SO SO Good. Thanks for the recipe. It was awesome. – Mami4Kai
P.S. My boyfriend was wanting more today the third day. I told him he was crazy. I loved the chicken just as much as he did but I don’t want to burn out a great recipe too soon. 🙂
